Do all sheets in the workbook export?

Plain text has no concept of multiple sheets, so expect contents written out sequentially or only the primary sheet, depending on the tool. If sheet boundaries matter, export sheets individually or convert to a format that keeps them, like XLSX.

Are the exported numbers the displayed values or the underlying ones?
