How are tables represented in the plain-text output?

As consecutive lines with cell contents separated by tabs or spaces - the grid itself has no plain-text equivalent. For structured data you plan to re-import somewhere, converting to XLSX preserves the columns properly.

Is a TXT export good input for text analysis or AI tools?

Excellent - it removes the XML wrapper, styling noise, and embedded objects, leaving pure content that tokenises cleanly. Headers, footers, and page numbers are dropped too, which is usually what corpus preparation wants anyway.

What encoding does the output use, and does it matter?

UTF-8 is the modern default and handles every script. It matters the moment your text leaves plain ASCII: smart quotes, accents, and non-Latin characters display as junk in tools that assume a legacy encoding, so set UTF-8 explicitly when opening the file.
